fix(gitea): SSH_USER=gitea so existing gitea@ remotes keep working 3d40ad3620

The retired LXC ran RUN_USER=gitea, so all clone URLs and git remotes are
gitea@gitea.renner.uno. The rootless image runs as `git`, defaulting SSH_USER to
`git` and rejecting `gitea@` logins (Permission denied). Pinning SSH_USER=gitea
restores the pre-migration convention with no per-repo remote changes.
